Our Master Butcher carefully prepares this magnificent cut of lamb by removing the shoulder blade, excess fat, and gristle. This joint comes from the harder working part of the lamb so it requires longer, slower cooking to become nice and tender.

Our lamb is Welsh Lamb, born and raised in the hills of Wales, which are famous for producing amazing quality Lamb. They are naturally raised on a grass-fed diet.

The boneless lamb shoulder offers easy carving when cooked to perfection and can also be used in stews or hot pots for extra depth of flavour. With its stringy texture, this versatile cut is ideally matched with strongly flavoured herbs and spices for an added kick. Add some water, wine and a few herbs, like rosemary and thyme, to the cooking juices for a great gravy. And don't forget the mint sauce.
