Thai-Style Steak Salad

There’s nothing quite like the vibrant flavours of summer on your plate. Even if the British weather doesn’t always play along, this Thai-style beef salad brings a burst of sunshine to your table. Juicy Welsh steak, crisp veggies and a zesty lime dressing come together for a dish that’s fresh, colourful and full of life — perfect for light lunches, laid-back evenings or sharing with friends when the sun does decide to shine.

Serves 2

Ingredients

250–300g Welsh rump or sirloin steak

Salt & black pepper

1 tbsp vegetable oil

 

For the salad:

½ small red onion, finely sliced

1 cup shredded lettuce or mixed leaves

½ cup shredded red cabbage

8–10 cherry tomatoes, halved

½ red pepper, thinly sliced

2 spring onions, chopped

Small handful cashews (or peanuts), roughly chopped

Lime wedges, to serve

For the dressing:

Juice of 1 lime

1 tbsp fish sauce

1 tsp soy sauce

½ tsp sugar

½ red chilli, finely chopped (or to taste)

1 garlic clove, minced

 

Method

1. Cook the steak:

Season your steak generously with salt & pepper.

Heat oil in a frying pan until smoking hot. Cook steak 2–3 minutes per side for medium-rare (adjust to your liking).

Rest for 5 minutes, then slice thinly against the grain.

2. Make the dressing:

Whisk together lime juice, fish sauce, soy sauce, sugar, chilli and garlic until sugar dissolves.

3. Assemble the salad:

In a large bowl, combine lettuce, cabbage, onion, tomatoes, pepper and spring onions.

Drizzle over dressing, toss well, then scatter over cashews.

4. Top with steak:

Lay slices of warm steak on top of the salad.

Serve immediately with extra lime wedges.
